A 4lbs farm-raised chicken, ready to cook.
6 onions
2 carrots
Mashed potatoes
Green peas
Salt

Set your oven on 180°C. Pass the chicken under cold water and salt it thoroughly on the outside and in the abdominal cavity. Cut the carrots in two, 2 of the onions in two and stick them in the chicken. Put the chicken on a large oven dish. Cut the remaining onions in thin slices and place them around the chicken. Pour a thin stream of olive oil over the onions.
Cook 20mn on 180°C them pour a glass of water on the onions. Take care not to burn yourself. Cook another hour on 180°C.
Serve with mashed potatoes and green peas.
